Kay’s Always Tender Venison Stew

Here at the Rockin’ DK Ranch, we look forward to cooler weather to enjoy campfires, longer rides around the ranch, earlier sunsets and of course a big bowl of Kay’s Always Tender Venison Stew. It’s a real treat for her to share her famous recipe here on the blog so without further ado, let’s dive in!


INGREDIENTS

1 1/2 to 2 lbs of venison cut into bite-size chunks
(backstrap or tenderloin is always best but other cuts work as well. You can use the same recipe for beef or pork)

1 med. onion, chopped

1 to 2 Tbs chopped garlic

Salt and pepper to taste
(Montreal Steak Seasoning works great too)

1/2 tsp cumin

1 tsp chili powder

About 1 cup of good dry red wine
(a Malbec goes best with venison but a Merlot works well too. The alcohol will break up the meat fibers and acts as a tenderizer. Be sure to save some to drink with your meal!)

1 can Cream of Mushroom soup

2-3 lbs small red potatoes, halved or quartered

2 lbs baby carrots

3-4 celery stalks, chopped

1 28oz can whole tomatoes

1 small can of chopped green chilies
(if you like it more spicy, add jalapenos or a can of Rotel)


DIRECTIONS

Place venison in a hot skillet with 2-3 Tbs of olive oil. Season meat while browning.
Add onion & garlic.
When the meat begins to brown on all sides and the onions begin to soften, add the wine and continue stirring until most of the wine has dissipated (takes about 10 minutes).
Stir in the mushroom soup and a can of water.
Transfer the meat mixture to a crock pot and stir in the remainder of the ingredients.
Add enough water to cover the veggies.
Cook on high for 3-4 hours or on low for 6-8 hours.

Serve with Camp Cornbread and enjoy!
