Danny’s Axis Chili Recipe
This is the easiest and best venison chili made with axis meat you will ever make! It’s hearty, delicious and perfect for the deer camp or a cozy dinner on those cold nights. It may be easy to put together, but it’s certainly not lacking flavor!! Just the right mix of spices, it won’t disappoint.
INGREDIENTS:
4 lbs. ground Axis meat (if you don’t have Axis you can substitute another venison)
2 med. Onions chopped
2 Tbsp. garlic chopped
4 Tbsp. ground red chilies or chili powder
1 tsp. Mexican oregano
1 Tbsp. cumin
1 28 0z can diced tomatoes
3 or 4 serrano peppers, chopped
Salt and pepper to taste
1 good Mexican beer (not light!)
DIRECTIONS:
Brown Axis meat in a little bacon grease or lard while adding onions, garlic and spices.
Add the beer slowly, while stirring. (Enjoy a sip or two while the mixture is simmering).
When most of the liquid has simmered off, add the tomatoes and peppers. Let simmer for 45 minutes. Serve with your favorite toppings, Camp Cornbread, your favorite beans and ENJOY!!
